There are several different theories as to the origins of the bergamot fruit although the most likely is a cross between bitter orange and lime. The fruit is similar to an orange, but is a green-yellow colour. The peel is rich in essential oils and the juicy flesh has a tart, bitter flavour. It has all the same nutritional values as other citrus fruits but the peel boasts its unique bergamot fragrance widely used in the perfume, confectionery and liquor industries.
